Spooky cake pops shaped like eyeballs with vanilla cake, cream cheese frosting, and colorful chocolate coating.

# What you need:

→ Cake Base

01 - 1 box vanilla cake mix (15.25 oz) or 14 oz homemade vanilla cake
02 - 3 large eggs
03 - 1/2 cup vegetable oil
04 - 1 cup water

→ Cream Cheese Filling

05 - 3.5 oz cream cheese, softened
06 - 3.5 oz unsalted butter, softened
07 - 7 oz powdered sugar
08 - 1 teaspoon vanilla extract

→ Decoration and Coating

09 - 14 oz white chocolate or white candy melts
10 - 1.75 oz dark chocolate or black candy melts
11 - 1.75 oz blue or green candy melts OR colored icing
12 - Red gel food coloring or red decorating gel

# Directions:

01 - Preheat oven to 350°F. Prepare and bake the vanilla cake according to package or recipe instructions. Allow the cake to cool completely before proceeding.
02 - Crumble the cooled cake into a large bowl, breaking it down until fine, uniform crumbs form throughout.
03 - In a separate bowl, beat cream cheese, butter, powdered sugar, and vanilla extract together until smooth and creamy.
04 - Mix the frosting with the cake crumbs until fully combined and the mixture holds together when pressed.
05 - Scoop tablespoons of the mixture and roll into 24 balls. Place on a parchment-lined tray and freeze for 20 minutes to firm.
06 - Melt the white chocolate or candy melts gently. Dip each cake ball in the melted coating, fully enrobing it, then return to the tray.
07 - Pipe or dip a small amount of colored candy melt (blue or green) onto the center of each ball while the white coating remains soft.
08 - Once the coating has set, add a small dot of dark chocolate or black candy melt to create the pupil.
09 - Use red gel food coloring or decorating gel to draw intricate vein patterns radiating from the iris for a realistic eyeball effect.
10 - Allow all decorations to set completely. For best texture and firmness, serve chilled.

# Expert advice:

01 -
  • They look genuinely gory but taste like pure sweet heaven
  • The cake and frosting combo creates the most incredibly fudgy texture
  • Kids cant resist helping decorate the spooky faces
02 -
  • Room temperature cake balls prevent the white chocolate from seizing and turning into a lumpy disaster
  • Working quickly once you start dipping is essential since the chocolate sets fast and you need time for decorations
  • A toothpick dipped in food coloring gives you way more control than trying to draw veins directly from the bottle
03 -
  • If your chocolate coating starts thickening as you work, add a teaspoon of coconut oil or vegetable shortening to thin it back to dipping consistency
  • Prepare all your decorating materials before you start dipping so you can work quickly while the coating is still soft
