02 - 1 small onion, finely diced
03 - 1 small green bell pepper, diced
04 - 1 clove garlic, minced
05 - 4 fl oz pizza sauce
06 - 2.6 oz shredded mozzarella cheese
07 - 1.8 oz shredded cheddar cheese
08 - 1 tsp dried oregano
09 - 0.5 tsp dried basil
10 - 0.5 tsp salt
11 - 0.25 tsp black pepper

→ Dough & Assembly

12 - 24 halal-certified egg roll wrappers
13 - 2 tbsp olive oil for brushing or frying

→ Optional

14 - Extra pizza sauce for dipping

# Directions:

01 - Preheat oven to 400°F, or heat oil to 350°F if frying.
02 - In a large skillet over medium heat, cook halal ground beef until browned, approximately 5-7 minutes. Drain excess fat using a slotted spoon.
03 - Add diced onion, green bell pepper, and minced garlic to the skillet. Sauté for 3-4 minutes until vegetables are softened and fragrant.
04 - Stir in pizza sauce, dried oregano, dried basil, salt, and black pepper. Cook for 2 minutes, stirring occasionally, then remove from heat.
05 - Allow beef mixture to cool for 5 minutes, then stir in shredded mozzarella and cheddar cheese until fully incorporated.
06 - Place an egg roll wrapper on a clean work surface with one corner pointing toward you. Add 1-2 tablespoons of filling near the top corner.
07 - Fold the top corner over the filling, then fold in both sides at 45-degree angles. Roll tightly away from you. Brush the bottom edge with water and press to seal.
08 - Repeat rolling and sealing process with remaining egg roll wrappers and filling until all 24 rolls are assembled.
09 - For baking: Arrange rolls seam-side down on parchment-lined baking sheet. Brush generously with olive oil. Bake for 15-20 minutes, turning halfway through, until golden and crispy. For frying: Deep-fry rolls in batches for 2-3 minutes until golden brown. Transfer to paper towels to drain excess oil.
10 - Serve rolls hot with extra pizza sauce for dipping.

# Expert advice:

01 -
  • These rolls stay remarkably crispy even after cooling, something I discovered when guests were still raving about them an hour after serving.
  • The filling is completely customizable, letting you use whatever halal meats or veggies are hiding in your refrigerator.
02 -
  • Overfilling the wrappers will cause them to burst during cooking, a mistake I made during my first attempt that left cheese splattered all over my oven.
  • Allowing the filling to cool slightly before adding cheese prevents the cheese from fully melting into the mixture, creating those perfect stretchy pockets when bitten into.
03 -
  • Sprinkle a few breadcrumbs into the filling to absorb excess moisture, preventing soggy rolls—a trick my neighbor from Sicily taught me after trying my first batch.
  • For the absolute crispiest baked version, place the rolls on a wire rack over your baking sheet rather than directly on the parchment paper, allowing hot air to circulate underneath.
