01 - Preheat oven to 350°F. Line two baking sheets with parchment paper.
02 - Whisk together flour, cocoa powder, baking soda, and salt in a medium bowl until evenly incorporated.
03 - Beat softened butter and granulated sugar in a large bowl until light and fluffy, approximately 2 minutes.
04 - Add egg and beat until fully combined. Mix in buttermilk and vanilla extract. The batter may appear curdled, which is expected.
05 - Gradually add dry ingredients to wet mixture, mixing just until combined. Do not overmix.
06 - Drop rounded tablespoons of batter onto prepared baking sheets, leaving 2 inches of space between each.
07 - Bake for 10 to 12 minutes until tops spring back when gently pressed. Cool completely on wire rack.
08 - Beat butter until creamy. Add powdered sugar and beat until smooth. Incorporate marshmallow creme, vanilla, and salt until fluffy and fully combined.
09 - Spread or pipe filling onto flat side of half the cookies. Top with remaining cookies, flat side down, to form sandwiches.
