# Expert advice:

01 -
  • The Cajun crust creates this incredible crispy-spicy shell while the salmon stays impossibly tender inside.
  • It's genuinely ready before your rice finishes cooking, so busy weeknights suddenly feel manageable.
  • Lime cuts through the richness so perfectly that you don't need butter or heavy sauces to make it sing.
02 -
  • Overcooking salmon by just two minutes takes it from buttery to dry, so set a timer and trust it.
  • Drying the fish before seasoning makes the difference between a crust and a soggy coating.
03 -
  • Keep your oven light on and just peek inside at the twelve-minute mark instead of opening the door and letting heat escape.
  • Add lime zest to your seasoning mix if you want extra brightness that makes people ask for the recipe.
